15 Minute Super Easy Lunch or Dinner Recipe using leftover chicken, orzo, pesto and spinach

I call this my supermom meal. It's super easy, super fast and super delicious. I had leftover uncooked orzo from making my butternut squash orzo, leftover rotisserie chicken, spinach and a jar of pesto. Put all those things together and you have a delicious lunch idea for the whole family! The thing that honestly takes the longest to cook is the orzo. It needs to boil for roughly 10 minutes.

I love the diversity and simplicity of this dish. Pesto comes in several different flavors, they have green pesto, red pesto, and several different added flavors. The one I used today was basil and zucchini.

You also don't have to add spinach. Kale has also worked well for me in the past. I've also foregone the leafy greens altogether when I didn't have any on hand. My family and I also love roasted vegetables so adding leftover veggies is also a great way to go.


Throwing leftover chicken from a rotisserie chicken or leftover chicken from any thing is really good in this recipe since chicken reheats well.
